5-Minute Poppy Seed Dressing

A creamy homemade poppy seed dressing made with four simple on-hand ingredients.

3/4 cup mayonnaise
1/3 cup honey granules (or sugar)
2 Tbs apple cider vinegar
2 tsp poppy seed

Whip the ingredients in a blender; refrigerate.

Almond Joy Butter

  • 2 cups almonds
  • 2 cups coconut, shredded or flaked
  • 1 tsp salt
  • 1/2 tsp vanilla
  • 1/4 cup cocoa powder (or 1/4 cup of chocolate chips for a sweet spread)
  1. Place almonds on a rimmed baking sheet and bake at 350 for 5 minutes, or until lightly toasted and fragrant; cool.
  2. In the meantime, place the coconut in a food processor and process until it turns moist, scraping down sides as needed(about 8 minutes). Scoop into a dish and set aside.
  3. Place cooled almonds in the food processor and process until it turns into butter, scraping down the sides as needed (about 8-10 minutes). Add the coconut, salt, vanilla, and cocoa powder and process till smooth. Palce in a glass jar and store at room temperature so it does not solidify. However, if storing more than 2 weeks, store in the refrigerator and bring to room temperature before using.

Blender Mayonnaise

Place the following ingredients inside blender:

  • 2/3 C safflower oil
  • 2 Tbs lemon juice
  • 1 t dry mustard
  • 1 t salt
  • 2 eggs

Blend a few seconds,  then gradually pour in

  • 1 1/3 C safflower oil, through opening in blender lid (smooth, steady stream) and continue mixing until thick and smooth.

I doubled this recipe already.  (It was slightly adapted from the Bosch Universal Mixer Instruction Booklet)

Blueberry Vinaigrette

  • 1/2 C blueberries (fresh or frozen)
  • 1/4 C apple cider vinegar
  • 1/4 C honey
  • 6 T olive oil

In a blender or food processor, blend all ingredients until smooth. Refrigerate until ready to serve.

Dry Ranch Dressing Mix

  • 1/2 C dry buttermilk powder
  • 1 T dried parsley, crushed
  • 1 t dried dill weed
  • 1 t onion powder
  • 1 t dried minced onion
  • 1 t salt
  • 1/2 t garlic powder
  • 1/4 t paprika

Combine all ingredients in food processor or blender and process on high speed until well blended and powdery smooth.

Feta Dressing

This recipe is for those of you who want to know exactly how much of everything I happen to dump into the jar. 🙂

  • 2 oz. feta cheese, chunked (2/3 cup)
  • 3/16 t. garlic powder
  • 3/16 t. parsley
  • 1/8 t. basil
  • a dash of salt, cumin, and ground mustard
  • 1 cup olive oil

Combine in a jar.

It’s best chilled, but let it sit at room temperature for a little while before serving.

Greek Salad

Greek Salad

Salad:

  • 1 or 2 heads romaine lettuce–rinsed, dried and chopped
  • 1 bell pepper, chopped (I used orange)
  • 1 cucumber, halved lengthwise and sliced
  • 1 cup crumbled feta
  • 5 oz. cherry tomatoes, halved

Combine salad ingredients in a bowl, adjusting ammounts as desired.

Salad Dressing:

  • 1/2 cup + 2 Tbs olive oil
  • 1/2 cup red wine vinegar
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 3/4 tsp pepper
  • 3/4 tsp salt
  • 3/4 tsp onion powder
  • 3/4 tsp Dijon-style mustard

Mix (or shake) all ingredients together in a jar or sealed caraffe. Pour over salad. Store in fridge.

1/4 cup mayonnaise
1 T mustard
1 T honey
1/2 T lemon juice

Honey Mustard Vinaigrette Salad Dressing

1/2 cup olive oil
3 tablespoons apple cider vinegar
2 tablespoons water
1/4 cup honey
1/4 cup mustard (Dijon or other)
1/2 teaspoon dried basil
1 teaspoon salt
dash of black pepper

Combine all ingredients in a bowl and whisk until well-mixed. Or, place ingredients into dressing bottle/jar, seal with a tight-fitting lid, and shake to combine. Serve with your favorite lettuce greens, or use as a dipping sauce for chicken.

Makes about 1 1/2 cups

Italian Dressing Mix

Italian Dressing Mix:

  • 2 Tbs dried oregano
  • 2 Tbs salt
  • 1 Tbs dried parsley
  • 1 Tbs garlic salt
  • 1 Tbs onion powder
  • 1 Tbs white sugar (or sucanat w/honey)
  • 1 tsp ground black pepper
  • 1 tsp dried basil
  • 1/4 tsp dried thyme
  • 1/4 tsp celery salt

Mix the spices together and store in a tightly sealed container.

Italian Dressing:

Combine 1/4 cup white vinegar, 2/3 cup olive oil, 2 Tbs water, and 2 Tbs of the dry mix in a carafe or sealable jar. Shake to combine.
