- 3 ripe bananas
- 2 cups old-fashioned oats
- 1/4 cup creamy peanut butter
- 1/4 cup unsweetened cocoa powder
- 1/2 cup unsweetened applesauce
- 2-4 tablespoons honey (depending on how sweet you like it)
- dash of cinnamon (optional)
- 1 teaspoon vanilla extract
- 1/4 cup mini semi-sweet chocolate chips (optional)
Mash bananas in a large bowl, then stir in remaining ingredients. Let batter stand for approximately 20 minutes, then drop by heaping teaspoonfuls onto ungreased cookie sheet. Bake at 350 for 10-12 minutes (these cookies retain their shape and don’t spread out on the cookie sheet, so keep that in mind).

Ingredients:
- 2 cup unsweetened almond milk (I use vanilla almond milk)
- 2 Tbsp carob powder (or cocoa powder)
- 1 Tbsp maple syrup (or to taste)
- Splash of vanilla extract
- Pinch of Sea Salt (optional)
Directions:
Whisk all ingredients together in a saucepan. Warm over medium-low heat until desired temperature. Be careful not to let it boil, or you will destroy the enzymes, and thus some of its nutrients.

Black beans are the secret ingredient in these moist, cake-like cookies.
- 1 (15 oz) can organic black beans, drained and rinsed
- 1/4 cup coconut oil, melted
- 1 cup honey
- 2 eggs
- 1 Tbs vanilla
- 2 cups whole wheat flour
- 1/2 cup cocoa powder
- 2 tsp baking soda
- 3/4 tsp salt (or 1/2 tsp if not using organic beans)
- 3/4 cup semi-sweet mini chocolate chips
In a food processor, blend the black beans, coconut oil, honey, eggs, and vanilla until smooth (There will still be specks of beans). Add the flour, cocoa powder, baking soda, and salt; process until combined. Add the chocolate chips and pulse until distributed. Spoon cookie dough by heaping tablespoons onto baking trays. Bake at 350 for 9-10 minutes, or until cracked and beginning to set. Let cool on the tray for a couple minutes before transferring cookies to wire racks to cool.

An unleavened, dairy-free, and delicious Passover treat
Ingredients:
- 3-4 salted matzo squares (I used 3 1/2)
- 2 Tbs coconut oil
- 1/4 cup honey
- 1/2 tsp vanilla
- 1/2 cup semi-sweet mini chocolate chips, divided
- 1/4 cup roasted peanuts
Directions:
- Heat the coconut oil in a saucepan over medium-low heat until melted. Stir in the honey and vanilla until combined.
- Line a large, rimmed baking sheet with parchment paper. Arrange the matzo squares on the tray, breaking them as needed to fit.
- Coat both sides of each matzo piece in the honey mixture and place on the parchment paper.
- Bake at 350 degrees for 5 minutes. The caramel should be bubbling on the tray and the matzo golden. Be careful not to overcook.
- Sprinkle 1/4 cup of chocolate chips (or more!) on the matzo pieces. Let sit for 5 minutes. Spread the melted chocolate evenly on the matzo.
- Sprinkle with remaining 1/4 cup of chocolate chips and peanuts if desired. (I like to spread the chocolate chips around a bit to coat them in the melted chocolate and then sprinkle on the peanuts.)
- Place in the freezer or refrigerator until the chocolate is hardened.
- Break in pieces and store in the refrigerator.

These vegan Double Chocolate Muffins–spiced with vanilla, coconut, and banana–are moist and delicious! They’re slightly sweet and great for a light snack or breakfast. I’ve also given options for richer dessert muffins. Either way, they’re good, it just depends on your preference!
Ingredients:
- 1 1/4 cup whole wheat flour
- 1/3 cup cocoa powder
- 1 heaping Tbsp of ground flaxseed (or more flour)
- 1 Tbsp baking powder
- 3/4 tsp salt
- 1 large ripe banana (or 1 1/2 small bananas)
- 1/2 cup coconut oil, melted
- 1/2 cup vanilla almond milk
- 1/2 cup sucanat (or 3/4 cup for dessert muffins)
- 2 tsp vanilla (increase to 1 Tbsp if using regular almond milk)
- 1/3 cup semi-sweet mini chocolate chips (or 1/2 cup for dessert muffins)
Directions:
Whisk together the flour, cocoa, flaxseed, baking powder, and salt. In a separate bowl, puree the banana with a mixer. In a small saucepan melt the coconut oil over medium-low heat. Once the oil is melted, stir in the sucanat, almond milk, and vanilla. Heat until warm (not hot). Pour into the bowl with the mashed banana and mix until combined. Blend in the flour mixture until combined. Stir in the chocolate chips. Line a 12 cup muffin tin with muffin liners. Pour the batter evenly into the cups. Bake at 375 for 15-17 minutes or until the tops are set (they should feel springy but not gooey). Cool a few minutes in the pan before removing the muffins from the tin and placing them on a wire rack to cool. Serve warm or cooled.

A delicious and refreshing treat!
Ingredients:
- 1/4 cup semi-sweet mini chocolate chips (I use Enjoy Life)
- 1 tsp coconut oil
- 1 orange, peeled and segmented
Directions:
Arrange the orange segments on a parchment covered dish. Place in the freezer for a few minutes. Meanwhile melt the chocolate chips and coconut oil in a small saucepan over medium-low heat until melted. Roll each orange segment in the melted chocolate until coated and place back on the parchment paper covered dish. You may need to melt more chocolate chips and coconut oil depending on the size of the orange and how thickly you coat the segments. Place back in the freezer uncovered for about 15 minutes or until the chocolate is hardened. Serve. Store leftovers (if there are any!) in a sealed container in the refrigerator.

For the Bars:
- 1/2 cup coconut oil
- 1/2 cup unsweetened cocoa powder
- 5 tablespoons liquid sweetener (maple syrup, agave, etc.), or to taste
- pinch of sea salt, to taste
- 1 teaspoon pure vanilla extract
- 1 cup rice crisp cereal
Line a 9×5 inch loaf pan with parchment paper. In a pot over low heat, gently melt the coconut oil and then whisk in the rest of the crunch bar ingredients (except the rice crisp) to taste. Once the mixture is smooth remove from heat and stir in the rice crisp cereal. Pour mixture into prepared pan, smooth out, and then freeze for 10-15 minutes, or until the chocolate is solid.
For the Peanut Butter Drizzle:
- 2 tablespoons all-natural peanut butter (or any nut/seed butter of choice)
- 1.5-2 teaspoons coconut oil, as needed to thin out
- 1 teaspoon liquid sweetener (maple syrup, agave, etc.)
Melt the coconut oil and then whisk in the peanut butter and liquid sweetener. Adjust to taste if desired. Scoop into a plastic baggie. Remove crunch bars from the freezer and cut into 12 small bars. Snip a tiny hole in the baggie and drizzle the PB mixture onto the bars (you can also try drizzling it with a spoon, if desired). Return bars to the freezer until the PB drizzle is solid, about 5 minutes. Serve straight from the freezer or fridge. Bars will melt slightly at room temperature so I don’t suggest keeping them out long. Store leftovers in the fridge or freezer.

Ingredients:
- 1/2 cup virgin coconut oil
- 1/4 cup raw almond butter (or nut butter of choice)
- 1/2 cup cocoa powder (or raw cacao powder)
- 1/2 cup pure maple syrup (or agave nectar)
- 1 tablespoon pure vanilla extract
- pinch fine grain sea salt, to taste
- 3/4 cup raw walnuts, roughly chopped
Directions:
- With electric beaters, beat together the coconut oil and almond butter.
- Sift in the cocoa powder and beat again until combined.
- Pour in the maple syrup, vanilla, and salt and beat until smooth (this will take a few minutes).
- Stir in the walnuts.
- Line a loaf pan with a piece of parchment paper. Scoop the chocolate mixture into the pan and spread out until even. I took another handful of walnuts, broke them up, and sprinkled over the top of the fudge for extra crunch and good looks.
- Freeze uncovered for about 1 hour, or until solid. Slice into small squares and eat! Store in freezer.

Cookie Dough:
- 1/2 cup coconut oil (or 1 stick of butter)
- 1/2 cup honey granules (or sugar)
- 1/4 cup sucanat (or brown sugar)
- 1 egg
- 1 tsp vanilla
- 1 cup whole-wheat flour (could try almond flour)
- 1/4 cup ground flax seed
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 1/4 cup flaked unsweetened coconut
With a mixer, cream the coconut oil, honey granules, sucanat, egg, and vanilla. In a separate bowl, whisk together the flour, flax seed, baking soda, and salt. Gradually blend the flour mixture into the wet mixture until combined. Mix in the coconut. Drop cookie dough by heaping teaspoons onto baking sheets. Make sure to place the cookies about 2″ apart, since they will spread quite a bit while baking. Bake at 350 degrees for 10-11 minutes, or until just beginning to turn golden. Let the cookies stay on the tray for a few minutes before transferring to wire racks to cool.
Chocolate Drizzle:
- 1/4 cup semi-sweet mini chocolate chips (or chopped chocolate)
- 1 Tbs coconut oil
Melt the chocolate chips and coconut oil in a saucepan on low heat, stirring until smooth. Arrange the cookies on a tray and drizzle the chocolate over the cookies. Place the tray in the freezer for a few minutes until the chocolate hardens. Once hardened, store the cookies in a container in the refrigerator so that the chocolate stays firm.
Chocolate Coating: (For a thicker topping)
- 3/4 cup semisweet mini chocolate chips (or chopped chocolate)
Melt the chocolate over low heat, stirring until smooth. Place a small dollop of chocolate in the center of each cookie and spread into a circle in the middle of the cookie. Arrange cookies on a tray and place in the freezer for a few minutes until chocolate is hardened. Store in a container at room temperature.
Makes about 3 1/2 dozen cookies

1 1/2 cups honey granules (or sugar)
1 1/4 cups butter, softened
2 eggs
2 cups flour
3/4 cup cocoa
1 tsp baking soda
1/2 tsp salt
1 cup chocolate chips
Cream together the first three ingredients. Add remaining ingredients and mix well. Spoon by tablespoons onto baking sheets. Bake 8-12 minutes at 350 degrees, or until the cookies are just done but not well-done. Overcooking will make them dry and hard. Cookies will flatten as they cool. Leave on pan for a few minutes before removing to cooling racks, or they will fall apart.
