Cuban-Style Black Beans
- 1 large sweet onion, diced
- 3 cloves garlic, minced
- 3 celery stalks, diced
- 3 medium carrots, diced
- 1 red bell pepper, diced
- 1 can diced tomatoes
- 1/4 C fresh cilantro, chopped
- 1 T dried oregano
- 2 t cumin
- 1/2 t salt
- 1/4 t pepper
- liquid from 2 cans of black beans
- 2 bay leaves
- black beans
- rice, cooked
In a large pot, saute onion in olive oil, adding garlic halfway through. Add other ingredients through liquid from beans. Stir, then add bay leaves. Simmer for 15 minutes (till veggies are cooked). Add black beans and simmer for 5 minutes (till beans are warmed). Serve over rice.
